Here are three of our most beloved origins — and the stories behind them.


Mexico: Chocolate, Walnut & Low Acidity

Mexican coffee is one of the best-kept secrets in specialty coffee. Grown at high altitudes in regions like Chiapas and Oaxaca, it tends to be smooth and well-balanced, with a mild acidity that makes it approachable for a wide range of palates.

Flavor profile: Dark chocolate, walnut, light caramel, subtle earthiness.

Processing: Washed, which produces a clean and consistent cup.

Best brewed as: Drip, pour over, or French press. Its low acidity also makes it an excellent cold brew base.

Guatemala: Brown Sugar, Citrus & Bright Complexity

Guatemala's Antigua and Huehuetenango regions produce some of Central America's most celebrated coffees. Volcanic soil, high altitude, and a distinct dry season combine to create beans with exceptional sweetness and a lively acidity.

Flavor profile: Brown sugar, dried citrus, milk chocolate, and a lingering finish.

Processing: Washed or semi-washed, preserving the bean's natural brightness.

Best brewed as: Pour over is the gold standard here — it lets the citrus brightness and sweetness come through without muddiness.

Ethiopia Natural: Blueberry, Jasmine & Wine-Like Depth

Ethiopia is the birthplace of coffee — and it shows. Ethiopian coffees, particularly naturals (where the fruit is dried on the bean), are unlike anything else in the world. They're bold, aromatic, and intensely fruity in a way that surprises first-time drinkers.

Flavor profile: Blueberry, jasmine, dark cherry, wine-like body.

Processing: Natural (dry-processed), which imparts intense fruit character to the bean.

Best brewed as: Pour over or AeroPress. The natural process means these beans are best at slightly lower water temperatures (around 195°F) to avoid over-extracting the fruit sweetness.
